Spencer described this period as a transition to becoming “almost empty nesters,” with their son still in school and their daughter studying in the Netherlands.

For Mayuree, 56, who had been a homemaker since moving to Dubai, the restaurant represented a return to a role she deeply valued. She meticulously planned the restaurant’s budget to ensure it remained manageable. Mayuree shared that she collaborated with a designer in Thailand to create illustrations of her dishes, which she displayed on the walls, likening it to a school project.

The menu at Khao Soi reflects Mayuree’s background as a homemaker. She expressed a longing to cook for her children again, leading to the creation of dishes reminiscent of family meals. Mayuree recounted how she once “tricked” her son into trying the mushrooms, which he now eagerly requests.
