Melbourne-based food stylist Caroline Velik has captured international attention by winning the specialty dish category at the prestigious World Porridge Making Championship. Her innovative creation, an Australian jaffle, stood out at the event held on October 4 in Carrbridge, nestled in the scenic Scottish Highlands.

This year’s championship marked the 32nd Golden Spurtle competition, a much-anticipated annual event celebrating the humble yet beloved porridge. Contestants from diverse culinary backgrounds compete in various categories, showcasing their unique takes on this classic dish. The championship attracts porridge enthusiasts and skilled chefs alike, eager to demonstrate their porridge-making prowess.

A Unique Twist on Tradition

Velik’s winning dish, a yoghurt flatbread jaffle stuffed with porridge, cleverly incorporated quintessential Australian ingredients. Using wattleseed, Davidson Plum Powder, and a splash of Bundaberg Rum, she crafted a modern interpretation of a traditional comfort food. Velik reportedly drew inspiration from her mother’s nostalgic rum banana recipe, which added depth to her flavor profile.

“I really wanted to do something they hadn’t seen before, and they definitely hadn’t seen jaffles before,” she expressed during an interview with ABC News Breakfast. Velik’s approach highlights her creative flair and desire to innovate within the realm of comfort food.

The Importance of Preparation

Understanding the significance of careful preparation, Velik dedicated considerable time to perfecting her recipe. Utilizing Australian oats was a crucial element in creating “good porridge,” she noted. Initially, she experimented with traditional bread but faced an unexpected challenge when the committee informed her that bread was not allowed.

“This really threw a spanner in the works,” she said, highlighting the pressure of preparing a dish within a confined 30-minute timeframe. Despite the setbacks, Velik’s culinary ingenuity shone through as she adapted her recipe on the go.

Overcoming Challenges with Creativity

Faced with the limitation, Velik turned to her culinary creativity and developed a yoghurt flatbread. “It was a disaster at first,” she admitted, describing the trial and error involved in finding a suitable alternative. However, inspiration struck while she contemplated her love for doughnuts. By crafting a dough-like flatbread, she not only maintained the essence of a jaffle but also created a delightful new texture.

“As soon as it was in the jaffle iron, it puffed up beautifully, resulting in a lovely, soft texture,” she recalled, excited by the transformation during cooking. Following this, she tossed the jaffle in caster sugar, reminiscent of treating a doughnut, before dusting it with Davidson plum powder for that quintessential Aussie twist.

Recognition Beyond Winning

In addition to her triumph in the specialty category, Velik demonstrated her versatile skills by securing the second spot in the coveted Golden Spurtle award for her classic porridge made with just water, salt, and oatmeal. This remarkable achievement emphasizes her proficiency in both modern and traditional forms of porridge-making.

The overall champion, Norwegian Sven Seljom, impressed the judges with his presentation of porridge made from Norwegian Black oats. Seljom highlighted the fascinating variations that can arise even when using just three simple ingredients, reinforcing the notion that porridge has endless possibilities.
